Ingredients:
- 2 large eggs
- A dash of milk
- A pinch of desert raisin salt
- Cheese, grated (optional)
- Oil, for greasing the pan
Instructions:
- Crack the eggs into a bowl, add a dash of milk, and sprinkle in the desert raisin salt. Whisk until well combined.
- Heat a pan over medium heat. If you're concerned about sticking, oil the pan lightly.
- Pour the egg mixture into the pan and let it cook until it's almost completely solid (the edges should start to lift from the pan).
- Sprinkle your choice of cheese evenly across the surface of the egg.
- Once the cheese begins to melt, gently fold half of the omelette over to form a semi-circle.
- Wait for about 30 seconds to allow the cheese and egg to stick together.
- Flip the omelette to the other side and cook for an additional 30 seconds or so to ensure it’s fully cooked.
- Remove the omelette from the pan and serve immediately while warm.

You can enjoy this omelette with a drizzle of your favourite sauce, such as BBQ, Worcestershire or soy sauce.
For a more filling and flavour-packed version, try adding some extra ingredients before folding the omelette:
- Brown onion (diced)
- Kalamata olives (sliced)
- Tomato (diced)
- Capsicum (diced)
- Bacon (diced)
- Chorizo (diced)
Basically, any vegetables or toppings you have in the fridge can be added to create your own perfect loaded omelette!
