Handmade Scones:
No high tea is complete without scones. Try our easy-to-make recipe and enjoy them with our delicious jams!
Scones Recipe:
- 2 cups self-raising flour
- 1/4 cup caster sugar
- 1/2 tsp salt
- 60g cold butter, cubed
- 3/4 cup milk
- 1 egg, lightly beaten (for brushing)
Instructions:
1. Preheat your oven to 220°C (200°C fan-forced). Line a baking tray with baking paper.
2. In a large bowl, sift together the flour, sugar, and salt.
3. Rub the cold butter into the flour mixture using your fingertips until it resembles fine breadcrumbs.
4. Make a well in the center and add the milk. Use a butter knife to mix until just combined.
5. Turn the dough out onto a lightly floured surface and gently knead until smooth. Be careful not to overwork the dough.
6. Pat the dough into a 2cm thick round. Use a floured round cutter to cut out scones, gently pressing the scraps together to make more scones.
7. Place the scones on the prepared tray, close together but not touching. Brush the tops with the beaten egg.
8. Bake for 12-15 minutes or until golden and cooked through. Transfer to a wire rack to cool slightly.
Serve your scones warm with our our native jams and a cup of Strawberry Gum or Lemon Myrtle tea.
