Ingredients:
- 2 large carrots, julienned
- 1 large zucchini, julienned
- 2 large potatoes, julienned
- 1 tbsp butter, for frying
- 250g-500g steak, or leftover meat (lamb, pork, chicken), thinly sliced
- 1/2 cup cornflour
- 1 tbsp desert raisin salt
- 1/2 jar of Quandong relish
- Rice or hoiken noodles (optional), to serve
Instructions:
- In a hot pan, melt 1 tablespoon of butter and add the julienned carrots, zucchini and potatoes. Stir-fry for a few minutes until the vegetables begin to soften.
- While the vegetables are cooking, prepare your meat. Coat the steak or leftover meat in a mixture of 1/2 cup of cornflour and 1 tablespoon of desert raisin salt.
- Once the vegetables are softened, add the coated steak (or leftover meat) to the pan. Cook until the meat is cooked through and browned, or until heated through if using leftover meat.
- Once everything is cooked to your liking, add 1/2 jar of Quandong relish and mix well until the vegetables and meat are generously coated.
- Serve in a bowl as is, or over rice or hoiken noodles for a more filling dish.
Tip:
For extra texture and flavour, try adding hoiken noodles as a base for your stir-fry. They soak up the sauce beautifully!
