Greek Salad with Quandong Balsamic Vinaigrette

Ingredients:

  • 1 large tomato, wedged
  • 1/2 continental cucumber, cubed
  • 1 medium red onion, thinly sliced
  • 1 tbsp sun-dried tomatoes, chopped
  • A large handful of Kalamata olives, de-stoned
  • 100g feta cheese, cubed
  • 1 pinch bush blend salt

Dressing:

  • Quandong Balsamic Vinaigrette (adjust to taste)

Instructions:

  1. In a large mixing bowl combine the tomato, cucumber, red onion, sun-dried tomatoes and kalamata olives.
  2. Add the cubed feta cheese and gently toss to mix.
  3. Sprinkle a pinch of bush blend salt over the salad to enhance the flavours with native spices.
  4. Drizzle generously with quandong balsamic vinaigrette and toss lightly to coat all ingredients.
  5. Serve immediately and enjoy the vibrant, refreshing flavours with a native Australian twist!
